The best way to prepare and eat a giant zucchini


Make some Zucchini “Fruit”

Ever since highschool my mom has tried to trick our family into eating Zucchini. Her best method was to prepare a sort of zucchini “fruit” (she called it Brigsdale Pinapple named after a friend who lived in Brigsdale). She put this “fruit” into cakes and pies and salads. Now that I’m older and have a ton of zucchini, I’m thankful for my mom introducing me to this idea.

The big idea is this: You cut up a zucchini into tiny pieces and then mix in some fruit juice concentrate, typically pineapple juice. Then you put it in the refrigerator, let the zucchini absorb the juice, and then you can eat the raw zucchini like you would any other fruit. This works for young zucchini or giant old ones.

This is the single best way to eat a TON of zucchini. It’s also great because you can fine tune how much fruit juice you use and adjust how sweet the final product is. Don’t like it too sweet? Use less fruit juice concentrate. Want it more sweet? Then add more. Want it to be a little sour? Add some vitamin c powder or vinegar or lemon juice. There’s lot of ways to customize it, and the zuchini will act like a sponge and soak up all that flavor.

And it’s not just a tasty treat. Zucchini is very nutritious. In fact, it’s nutritionally very similar to apples, and is actually superior in many ways. Don’t believe me? Take a look!

I’m not really sure why this idea isn’t more popular. Giant zucchini are plentiful and actually last a very long time in the pantry. The one in the video is 2 or 3 months old. It does eventually turn from green to yellow, but the flesh inside is still good.
